  1. Prepare the Ingredients
    Start by preparing all your ingredients: bruise and cut the lemongrass, slice the galangal, tear the kaffir lime leaves, thinly slice the chicken breast, and slice the mushrooms and chili peppers if using.
  2. Simmer the Aromatics
