Ingredients

Instructions

  1. Prepare the Molds
Grease small ramekins or a quindim mold with butter and coat with sugar. Preheat the oven to 350°F (175°C).
  2. Mix Ingredients
In a large bowl, mix the egg yolks, sugar, melted butter, shredded coconut, and coconut milk until well combined.
  3. Bake
Pour the mixture into the prepared molds. Place the molds in a larger baking dish and fill the dish with hot water halfway up the sides of the molds. Bake for about 40 minutes or until the quindim is firm and has a glossy surface.
    Be careful not to overbake.
  4. Cool and Unmold
Remove the quindim from the oven and let it cool to room temperature. Then, refrigerate for at least 2 hours. To unmold, run a knife around the edges of the quindim and invert onto a plate.
If difficult to unmold, briefly dip the bottom of the mold in warm water.
