  • 1 kilogram beef or rabbit, cut into portions
  • 500 grams small onions, peeled (or shallots for a sweeter taste)
  • 2 tomato sauce
  • 1 cup red wine (good quality)
  • 2 tablespoons red wine vinegar

Instructions
    Preparing the Stifado
  1. Marinate the MeatStifadoIn a large bowl, combine the meat with red wine, red wine vinegar, garlic, cinnamon, allspice, bay leaves, salt, and pepper. Let it marinate for at least 2 hours, or overnight in the fridge.
  2. Brown the MeatStifadoHeat olive oil in a large pot over medium-high heat. Remove the meat from the marinade (reserve the marinade) and brown it in batches. Set aside.
  3. Sauté the OnionsIn the same pot, reduce the heat to medium and add the small onions. Sauté until they start to soften and brown.
  4. Combine and SimmerAdd the meat back to the pot along with the reserved marinade and tomato sauce. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is very tender.
