Description

Ingredients
  • 2 long-grain white rice
  • 1 pound chicken thighs, cut into pieces
  • 1 pound andouille sausage, sliced
  • 1 cup chopped onions
  • 1 cup chopped bell pepper
  • 1 cup chopped celery
  • 3 garlic, minced
  • 1 can diced tomatoes
  • 4 chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pound shrimp, peeled and deveined (optional)
Instructions
  1. JambalayaIn a large pot or Dutch oven, sauté onions, bell pepper, and celery in a bit of oil until softened.
  2. JambalayaAdd garlic, Cajun seasoning, thyme, and smoked paprika. Cook for another minute until fragrant.
  3. Brown the chicken pieces and sausage slices in the pot. Remove and set aside.
  4. Pour in diced tomatoes and chicken broth, scraping up any browned bits from the bottom of the pot.
  5. Add rice, stirring to combine. Return the chicken and sausage to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
  6. If using, add the shrimp on top of the Jambalaya in the last 10 minutes of cooking, cover, and let cook until shrimp are pink and cooked through.
  7. Remove from heat and let sit, covered, for 5 minutes. Fluff rice with a fork before serving.
